Turkey soup to warm your soul

    Wanna know what to do with that leftover Turkey? Here’s your answer: This incredible turkey soup recipe that Food Network's 'Chopped' winner and pitmaster Leonard Botello IV of Truth BBQ, located right here in Houston, shared with me.

Botello defeated three other Texas pitmasters in the competition to reach the finals, facing contestants that showcased barbecue styles from Kansas City, Memphis, and North Carolina. The overall winner of the competition was Melvin “Boots” Johnson, executive chef at a Memphis-style barbecue location in Queens, New York.

This hearty dish is a great use of everything you’ll be using anyway, just set aside these ingredients to fix the soup afterwards. It’s bursting with flavors that will take you back to your childhood, and it's so easy to prepare. Botello normally fixes the soup after Thanksgiving.

Botello’s recipe combines shredded turkey with carrots, celery, onion, and herbs, simmered and served over a bed of rice.


Ingredients:

3-4 whole carrots, peeled

3-4 celery stalks

1 yellow onion

1 clove garlic

4-6 cups chicken stock

2 sprigs thyme

1 tbsp olive oil

1 tbsp butter

2 bay leaves

1 sliced jalapeno (optional)

Shredded turkey

2-3 cups wild rice

Method:

Heat olive oil and butter in a heavy cast iron dutch oven on the stovetop.

Using a handheld cheese grater to shred the carrots, celery, and onions.

Add the vegetables to the pot with minced garlic and sauté for 3-5 minutes.

Add chicken stock and shredded turkey (optional: Pro tip from the pitmaster himself: include turkey fat and/or skin in the soup to maximize flavor.

Rough chop the thyme and add to the pot along with the bay leaves.

Bring a pot to a simmer for 15 minutes.

Prepare the rice separately.

Serve soup over rice, top with jalapenos and enjoy the games!
